Consumers, my sister called me yesterday to find out how long cooked eggs can be kept in the refrigerator. She likes to make large quantities of egg salad for her family. She ends up throwing half of it away after 2 days because she is afraid they will get food poisoning in that small amount of time. Here are some basic guidelines to follow. Hard boiled eggs may be stored in the refrigerator for about 5 days. Leftover eggs whites and egg yolks can be kept in the refrigerator for approximately 2 to 4 days. Some suggest that you cover egg yolks with water before refrigerating. I have never tried that method so I will have to test it out. Eggs should be refrigerated in their original carton for optimum freshness. If you are making deviled eggs for a cook-out or picnic keep them chilled. If they are out in the heat too long I would toss them to be on the safe-side. For now happy shopping!
