Recipe: Lemony Dill Salmon with Asparagus Serves 4 1 ½ lb. salmon fillet that is cut into 4 pieces 1/4 cup extra-virgin olive oil 1/4 cup fresh dill or 1 tbsp. dried 1 tsp. lemon zest 4 large garlic cloves, minced 1 tsp. each, salt and ground pepper 4 large green onions, thinly sliced 1 lb. asparagus, cut into 1-inch lengths 4 12-by-18 inch sheets of heavy duty tin foil.

Place olive oil, lemon zest, garlic, dill weed and salt and pepper in large bowl and whisk to combine. Brush salmon with the oil mixture, and then toss in onions and asparagus in the mixture to coat. In center of each piece of foil spread 1/4 of the vegetables in a single layer. Top with salmon. For each packet, bring long sides of foil together and fold over about ½ inch, then again and crimp to seal. Do the same with the ends. Place packets on baking sheet and bake for 15 minutes.

Orange Mustard Glazed Salmon Steaks 3 tablespoons (packed) dark brown sugar 4 teaspoons prepared Chinese-style hot mustard or Dijon mustard 1 tablespoon soy sauce 1 teaspoon orange juice 1 teaspoon orange zest 2 7-to 8-ounce salmon steaks (about 3/4-inch thick) Combine brown sugar, mustard, soy sauce, orange juice, and zest in medium bowl; whisk to blend. . Brush 1 side of salmon steaks generously with half of glaze in medium bowl. Place salmon steaks, glazed side down, onto heated stove top or barbeque grill. Grill until glaze is slightly charred, about 4 minutes. Brush top side of salmon steaks with remaining glaze. Turn salmon over and grill until second side is slightly charred and salmon is just opaque in center, about 5 minutes longer. Transfer salmon to plates. Serve. For now happy shopping!
