Name: Troy Bellot
Restaurant: Passport Café & Catering, 1335 Dublin Road
Hometown: Roseau, Dominica
Background: I grew up travelling a lot, living in such places as Dominica, Jamaica, Trinidad, New York, Pittsburgh and Cincinnati. These travels have definitely helped me to form a broad culinary “arsenal” from which I draw frequently when developing menus and recipes.
Most memorable kitchen experience: Cooking with my grandmother in Kingston, Jamaica, when I was young. Although I have had the opportunity to work with some amazing chefs, the techniques she taught me are invaluable today. What I learned from her every Sunday making dinner was truly amazing – growing produce, shopping in the market, and cutting meats and seafood.
Best thing about the Columbus dining scene: There are so many people in the city who are not from Columbus. Because of that, there is real culinary diversity here.
