Recipe: Vegetable quiche, courtesy of Kathleen Murchison of Kathleen's Café.

Ingredients

1 small onion, finely diced. Four ribs of celery, finely diced. Double pie crust Dash of pepper 1 cup of broccoli with ½ cup of fresh spinach 6 eggs 1 cup of milk and/or heavy whipping cream

Roll out a double pie crust into a deep-dish quiche pan. Line with foil and add pie weights. Bake at 400 degrees for 10 minutes. Remove and cool, 20 minutes or so.

Sauté onions and celery in two tablespoons of butter. Add fresh ground pepper.

Spread onions and celery evenly into cooked pie crust. Layer 1 cup of broccoli with ½ cup of fresh spinach and place on top of onion and celery mixture. Top with cheddar cheese.

Wisk 6 eggs and 1 cup of milk and/or heavy whipping cream or ½ and ½ together and pour on top of vegetables.

Bake at 400 degrees for 1 hour.
