Mixed berry and feta tart, courtesy of Dan Varga of the Explorers Club.

-1 pkg. frozen puff pastry.
-1 pt. blueberries
-1 pt. strawberries
-1 pt. raspberries
-1 cup sugar
-2 Tbs. corn starch
-1 cup crumbled feta
-Zest of 1 lemon

Preheat oven to 425 degrees.

Thaw puff pastry and cut into 3x3 squares.

Mix berries, sugar, cornstarch and lemon zest. (Reserve some zest for a garnish.)

Place puff squares in a muffin pan and push down to form shell.

Fill shells about halfway with berry mixture.

Top each tart with 1 tablespoon of feta cheese.

Bake in oven for 20-25 minutes until filling bubbles.

Take from oven and let cool for 10 minutes. Remove from muffin pan.

Serve at room temperature with whipped cream and lemon zest.
