Recipe of the Week
- 1 cup butter
- 5 cups of confectioners’ sugar
- 2 cups of smooth peanut butter
- 12 oz. chocolate chips
- 1/4 bar of paraffin
Knead together butter and peanut butter and then add the sugar a little at a time. Add more sugar if needed. Shape into balls the size of walnuts. Freeze for about an hour. Melt the paraffin in the top of a double boiler and then add the chocolate chips.
Stick toothpicks into the balls and dip into chocolate so most of the ball is covered except for the top. This is what makes them look like buckeyes. Set up on wax paper on a cookie sheet in the refrigerator until cold. Keep buckeyes cool.
