Barbecue ribs

Barbecue ribs.


  • • 3 lbs spare ribs
  • • 1/4 cup Holy Smoke Pork Rub
  • • 1 cup Holy Smoke Spicy Chipotle BBQ sauce



Preheat smoker or grill to 250 degrees. Add cherry and or hickory wood chips or chunks (do not soak in water).

Apply a dusting of seasoning over the ribs. Rub seasoning into ribs. Heavier seasoning will produce a darker product. Don’t go to heavy.

Smoke ribs with medium to heavy smoke for 4 to 5 hours. Depending on type of smoker this time may vary. When the ribs fold over easily this is a sign they are done. When pulling on the meat you can see it coming away from the bone cleanly.

Brush sauce on to the ribs then seal in a pan or container and keep hot for 30 to 40 minutes in a low-temperature smoker, grill or oven. It is important to get the ribs sealed up fast. This will help give that soft texture and soften up the bark.
