Ingredients 2 zucchinis 1/2 cup flour 2 eggs beaten 1/2 cup corn meal Pinch salt Sauce 1/2 cup mayonnaise 2 sprigs tarragon, chopped 2 sprigs parsley, chopped Zest and juice of half a lemon Pinch kosher salt Pepper slaw 1 Serrano (or jalepeno) pepper, julienned 1 carrot peeled and shredded 1/2 yellow onion, julienned 1/2 red bell pepper, julienned 1 Tbl sugar 1 Tbl rice wine vinegar Directions:
Mix all of your sauce ingredients together in a bowl and place to the side.
Mix all of your pepper slaw ingredients together and place to the side.
Slice your zucchini into 1/4" slices.
Put your flour, eggs and cornmeal into separate containers.
Starting with the flour, dredge the zucchini in the flour.
After the flour, place the zucchini in the egg mixture until thoroughly coated, and then move the zucchini into the cornmeal and coat. Set to the side.
After all zucchini has been coated, get a pan and fill 1/4" with vegetable oil
Get pan hot until the temperature is about 350 degrees.
Place the zucchini in and fry about 2 minutes on each side, or until golden brown. Sprinkle with salt and place on paper towels to soak up oil.
Serve with the sauce and pepper slaw.
