Greg Powers of Canal Winchester purchased the site recently and is working to develop Leghorns, a new restaurant that will open there in the summer.

"I've been looking at the building for a while now," Powers said. "There's a lot of traffic through here."

Powers has been in the restaurant business for 20 years and owns Shade on the Canal in Canal Winchester. When looking for a second location, a friend told him about the former Bob Evans site in Heath. The 30th Street site was put up for sale after Bob Evans built a new, bigger restaurant on Hebron Road.

"This will be a casual dining place," Powers said. "All of our tables are made out of mahogany, and our bar is mahogany. We are putting up old black and white pictures."

The menu will include 15 appetizers, 20 sandwiches and homemade soups, chowders, chili and salsa. Pizza, wings and smoked meats round out the menu.

"It's kind of hard to describe," he said, trying to compare it to other restaurants. "There's no similar restaurant around here, so we think we'll fill a void."

John Groff, chief of Heath's division of building and zoning, said crews have been working at the site, taking down siding and making improvements.

Powers said they are working to renovate the interior, as well, enclosing the kitchen and giving the place a different feel.

"We'd like to be open in late summer," he said.

The restaurant in Canal Winchester employs 56 people. Powers said he would need to hire a similar amount of staff to operate Leghorns. The restaurant will be open seven days a week, from 11 a.m. to midnight Mondays to Saturdays, and possibly staying open later on Fridays and Saturdays and closing earlier on Sundays.

Powers said the kitchen will remain open until 45 minutes prior to closing to provide people with another late dinner option.
