Pie-maker gets his pizza hand ready again

Bill Yerkes is at it again.

After a brief hiatus from making traditional Napoli-style pizzas, Yerkes is again ready to put a pie in your face.

Yerkes is subletting Eleni-Christina Bakery in the evenings for his latest pizza enterprise, bonoTOGO (as in “to go”) — just in time for the Gallery Hop on Saturday. Although the place’s address is 641 N. High St., the storefront actually faces Russell Street, about 60 feet west of the main drag.

He said he and Kent Rigsby, who owns the bakery, worked out a 30-day trial period in which bonoTOGO will operate from 4 to 11 p.m. Wednesday through Sunday. Eleni-Christina is open during the morning hours.

“I hope it’s a long-term project,” said Yerkes, who added there will be no seating inside.

Yerkes said he won’t be able to use wood-burning ovens, which he makes and strongly endorses.

“I wouldn’t have done it if I hadn’t seen this oven from Sweden,” he said of the equipment at the bakery. “I really like wood fire, however, I’ve never seen an electric oven that got that hot. And the pizzas are almost indistinguishable.”

Pizzas will be $8 each or $20 for three and $4 for giant cream puffs.
